Once the images are added to the Gallery they still have to be inserted one at a time unless the ones you're inserting are all in the same category. I'm not sure what you're expecting so I can't tell you how - or whether - it can be done. FWIW, my configuration is identical to yours - OS X 10.6.8, Office 2008 (12.3.2) with both Safari & Firefox.
